BILL MOYERS INTERVIEWS MICHAEL POLLAN

Bill Moyers sits down with Michael Pollan, Knight Professor of Journalism at UC Berkeley, to discuss what direction the U.S. should pursue in the often-overlooked question of food policy.

JC Note: Despite Pollan’s lack of integrity regarding veganism, he does provide some fascinating insights to US health and agriculture!

RESPONSE TO ANTI-VEGETARIAN ARTICLES

... the Center for Consumer Freedom (CCF) put out an article on January 12 saying... that about 1 in 200 American kids under 18 (or 0.5 percent) reported observing a vegetarian diet in 2007. Yet in 2001, a Roper poll commissioned by the Vegetarian Resource Group (VRG) found that two percent of Americans ages 6 to 17 considered themselves vegetarians. That number later grew to three percent in a 2005 VRG poll conducted by Harris Interactive. So it actually looks like vegetarianism among teens and 'tweens has taken a nosedive in recent years...

The two survey questions about vegetarianism were:

*During the past 12 months did [your child] use any of the following special diets for two weeks or more for health reasons? Please say yes or no to each." [Vegetarian was one of the options.]

*During the past 12 months did [your child] use a vegetarian diet to treat a specific health problem or condition other than weight control or weight loss?

... Reed Mangels, RD, PHD of the Vegetarian Resource Group pointed out that, "As you can see, many parents whose children follow vegetarian diets for religious, ethical, animal rights, environmental or other issues...would answer "no" to this question and not be counted."

Thus, it is not true that the survey shows that only 1 in 200 kids are vegetarian. And the survey included kids of all ages, not just teens, and younger kids are probably less likely to be vegetarian than are teens, making it particularly fallacious for the CCF to claim that vegetarianism among teens has taken a nose dive in recent years...

THE ANCIENT HUMAN DIET IS STARCH-BASED

Starch grains on human teeth reveal early broad crop diet in northern Peru by Dolores Piperno reported in the December 16, 2008 issue of the Proceeding of the National Academy of Science, found plant parts on the teeth (dental plaque) of people who lived in Northern Peru as long as 11,200 years ago and concluded, “Starch grain studies of dental remains document plants and edible parts of them not normally preserved in archaeological records and can assume primary roles as direct indicators of ancient human diets and agriculture.”1

Researchers examined 39 human teeth found in northern Peru's Nanchoc Valley from six to eight individuals. Some of the grains had been cooked.  The diet of these people was considered stable for possibly 5000 years (until 6000 years ago).  These people cultivated their crops close to their circular houses.  Starch granules from Lima beans, common beans, peanuts, nuts, squash, grains, and fruits were identified.

Comment:  Often the only findings reflecting the diet of ancient people are the hard bones of animals that are found near their ruins.  Any plant material has decayed and disappeared.  Because of this many people have come to the wrong conclusion that early people were primarily hunters and their diet was largely of meat.  However, this research adds support for my often-stated position, that all large populations of trim, healthy people, throughout written human history, have obtained the bulk of their calories from starch...

VEGETARIAN DIET COULD HELP BAIL OUT THE BIG THREE

... GM officials say employee health care coverage is a major reason the company is in trouble. To cover the skyrocketing doctor bills, hospital bills and prescription drug costs, sticker prices on all GM cars and trucks have to go up about $1,500.

Detroit automakers – and all American manufacturers – are spending a fortune on health care because the workforce is so out of shape. Two-thirds of American adults are now overweight or obese. And as the Big Three employees get bigger, so do their health-care bills. Unfortunately, if current trends continue unchecked, almost 90 percent of American adults will be overweight or obese by 2030...

Scientific evidence shows that people who follow a plant-based diet require fewer doctor visits, fewer operations, and fewer prescriptions. If GM workers would choose a tofu veggie scramble over sausage and eggs, and a bean burrito over a meaty taco, not only could it trim GM's sticker prices and save jobs, but it would drastically improve their health and put them at a lower risk of developing diabetes and other diet-related illnesses that are plaguing Americans.

IS THERE A VEGAN IN THE WHITE HOUSE?

President Barack Obama has appointed animal advocate Cass Sunstein to head the relatively obscure, yet powerful Office of Information and Regulatory Affairs. The regulatory czar, as the position is generally called, is responsible for every regulatory agency in the country, such as the EPA, and will oversee all administration rules...

Sunstein, a vegetarian, co-authored the book Animal Right: Current Debates and New Directions, and has advocated for much stricter regulations of almost every industry that uses animals, including entertainment, clothing, science and agriculture...

CROPS ABSORB LIVESTOCK ANTIBIOTICS

For half a century, meat producers have fed antibiotics to farm animals to increase their growth and stave off infections. Now scientists have discovered that those drugs are sprouting up in unexpected places.

Vegetables such as corn, potatoes and lettuce absorb antibiotics when grown in soil fertilized with livestock manure, according to tests conducted at the University of Minnesota.

Today, close to 70 percent of the total antibiotics and related drugs produced in the United States are fed to cattle, pigs and poultry, according to the Union of Concerned Scientists. Although this practice sustains a growing demand for meat, it also generates public health fears associated with the expanding presence of antibiotics in the food chain...

WHY MERCURY TUNA IS STILL LEGAL?

First, Deborah Landvik-Fellner's hair started falling out. Then her speech began to slur and her memory grew unreliable. Her heart started fluttering, and her hands shook. One day she collapsed for no apparent reason. Landvik-Fellner, then 45, went to one doctor, then another, and another. None could figure out what was wrong. Finally, [mercury poisoning was identified as the cause]... For some 12 years, she'd been eating a can of albacore tuna every day. She'd never realized that most tuna sold in the United States is contaminated with the toxic heavy metal... "People come in complaining of slurred speech, clumsiness, and vision problems. It is usually related to fish," [a doctor] says. The U.S. FDA helped industry suppress the bad news about mercury. Still want fish for dinner?

THE FAT VEGAN

You may consider this title an oxymoron—a figure of speech that combines two normally contradictory terms, but in real life this concurrence is all too common. You may also think the title is offensive. My intention is to help, not to provoke anger.  People who have declared themselves “vegan,” have said “no” to eating all animal-derived foods. At extraordinary personal costs, many of these guardians labor tirelessly to protect the welfare of all animals. Fat vegans, however, have failed one important animal: themselves. Furthermore, their audiences of meat-eaters and animal-abusers may be so distracted by their appearance that they cannot hear the vital issues of animal rights and the environment; resulting in an unacknowledged setback for a fat vegan’s hard work for change...

Being vegan says to me this is a person with outstanding character.  Vegans are self-sacrificing and committed to making a difference.  When everyone else is certain that it is our God-given right to mistreat and kill cows, pigs, chickens, and fishes in order to be properly nourished; a vegan would rather risk protein and calcium deficiency than to harm these beautiful creatures.  Of course, this deep sacrifice ends with the discovery that plants provide all needed proteins, amino acids, essential fats, vitamins, and minerals (including calcium) without the inherent risks of flesh and dairy. Vegans are self-confident. They remain steadfast even when mom, dad, dietitian, and doctor are visibly angered by their religion of “veganism.” Vegans are industrious. To avoid eating animals in a world where beef, chicken, and cheese are mixed in with everything in the market and on the menu is a daily struggle.  Reading labels, turning down invitations to dinner, and occasionally, going hungry, require more effort than the average person is willing to muster.

Obviously vegans are exceptional people. With this one simple shift to a starch-based diet the word “vegan” will become synonymous with terms like healthy, trim, active, young, strong, and energetic, and finally the most important adjective, earth-changing.

EATING DVD - 3RD EDITION

The award-winning Eating DVD covers a lot of ground very comprehensively - and all within 88 short minutes. Among the many highlights are interviews with Dr. Caldwell Esselstyn, Dr. Neil Pinckney, Dr. Ruth Heidrich and Dr. Joseph Crowe.

Dr. Crowe and Dr. Esselstyn are from the world-famous Cleveland Clinic Foundation and know something about heart disease. In fact, Dr. Esselstyn directed the longest and most successful heart disease reversal program ever. These interviews will convince you that cardiovascular (heart) disease, the #1 killer in America today, can be reversed by switching to The Rave Diet. What you will get is a virtual one-on-one consultation with some of the world's leading authorities on heart disease reversal. Dr. Pinckney and Dr. Crowe both reversed severe heart disease by adopting The Rave Diet.

If you know someone with heart disease - who doesn't? - this will probably be the most valuable film they will ever watch - and from authorities with impeccable credentials. And if you eat to prevent heart disease, you will also prevent the other major chronic diseases that are plaguing Western nations. You will also hear from Dr. Heidrich who, after surgery, treated her breast cancer without chemotherapy, radiation or any other conventional treatments by following The Rave Diet.

Other topics include:

*Why we have an epidemic of heart disease, cancer, diabetes and other diseases.

*Why following federal nutrition guidelines will kill you.

*Why the government promotes foods that shorten lives.

*Why almost everyone has cancer by the time they're fifty - and don't even know it.

*Why our top two nutrition worries should be our last.

*Why doctors treat symptoms of disease, not causes.

*Why our most deadly diseases were rare before 1900.

*Why most school-age children already have heart disease.

*Why there's no difference between white meat and red meat.

*Why Americans are constipated.

*Why American men are impotent.

*Why Americans have weak bones.

*Why politicians are America's dieticians.

*Why farm animal feces is standard fare in meat today.

*Why our eating habit is like smoking, but more lethal.

*Why the most disturbing death statistic of our time is so little known - and it comes from the Surgeon General.

The Eating DVD also examines the consequences of our eating habit to global warming, the environment and animal agriculture. THIS IS A MUST SEE VIDEO!

BURGER KING: CANCER-CAUSING CHEMICAL IN GRILLED CHICKEN

PCRM recently found out that you really can “have it your way” at Burger King. The Miami-based company settled a lawsuit by agreeing to warn customers that it’s grilled chicken entrées contain PhIP, a cancer-causing compound. As part of its agreement with PCRM, Burger King has posted warning signs in its California restaurants.

PCRM filed suit against Burger King, along with McDonald's, Chick-fil-A, Applebee’s, Outback Steakhouse, Chili’s Grill and Bar Restaurant, and T.G.I. Friday’s in January 2008 for knowingly exposing their customers to PhIP without warning them of its risks. The case was filed in Los Angeles Superior Court under Proposition 65, which was designed to protect the health and safety of California residents.

“Health-conscious Americans have long steered away from fried chicken, but they have no idea that grilled chicken may be as bad or worse,” said PCRM president Neal Barnard, M.D...

VEGAN PREGNANCY - MY OWN TRUE STORY

... instead of sinking in the whirlpool of fears, I decided to take charge. Re-reading the `Pregnancy, Children, and a Vegan Diet' assured me that if I ate a wide variety of foods from the vegetable kingdom, plus some vegan supplements I will have a perfectly healthy and normal pregnancy. While mistakenly a vegan diet is thought of as a diet that lacks nutrients in fact exactly the opposite is true. A good vegan diet has an abundance of all nutrients that our body needs. I ate a variety of colorful, seasonal fruits and vegetables that gave me plenty of vitamins and minerals. I ate different legumes and beans with grains and rice, which fulfilled my needs for protein, carbohydrates, and fibers. I snacked on nuts, seeds, sprouts, and dry fruits. I drank plenty of water, fruit juices, and soymilk (fortified with B12). I also took vegan multivitamins with folic acid. Toward the end of my pregnancy, I took vegan iron--Floradix...

After a healthy full term pregnancy and a normal labor at our home in San Jose, CA, on May 25th, 1999, I gave birth to a perfectly normal baby girl, Paramita Peace Modha... Paramita is truly a vegan child. Perhaps surprisingly and quite reassuringly, in her entire time on planet Earth, we have never had to visit a doctor even once!

I went through a very similar second pregnancy, only this time I took no additional supplements. My second child, a boy, Sohum Bodhi Modha, was born on May 15th, 2001. Sohum was also born at our family home. At birth, he weighed 7 lb. 5 oz., and was very healthy as well. Sohum is now 6 months old and is exclusively on my breast milk, which I have an abundant supply of. As of today, even Sohum has not visited a doctor even once...

REAL VEGAN CHILDREN

Some women stop being vegan when they become pregnant, because either they or their doctors think a vegan cannot have a healthy pregnancy. On the contrary, as long as pregnant women, infants, and children are getting a reliable source of vitamin B12, they typically thrive on a vegan diet.

Mothers of the children below were vegan during pregnancy, and the kids have been vegan since birth.

KATHY ROBERTS, A MODEL HUMAN BEING AT 44

I have always wanted to be a fashion model. At age 19 after losing several pounds, by practically starving myself and jogging 3 miles a day, I went to an agency for an interview. I was told to lose 10 more pounds and then come back. I knew I couldn't do that, so I marched right into a See's candy store. On the way home I ate a bag-full of chocolates—I was broken-hearted over my shattered modeling career... At age 38, I was at my heftiest, 178 pounds...

Losing the first 10 or 15 pounds boosted my enthusiasm and confidence. As the fat melted off, I noticed muscle definition in my arms, legs, shoulders, and chest. My chubby face was reshaping—I discovered I had cheek bones and sharp angles to my jaw. Others noticed as well and commented. People began asking me what I was doing and telling me I looked fabulous—which is what I needed to hear...

I figured older models are becoming more popular—why not me? One week after sending my photos, I was called for an interview. They had me read a "dry script" about energy conservation, took a few pictures, measured me, and said they'd call within a couple of days. Two hours later they called and offered me a contract—I cried.

I am now 44 years old, 5' 8" tall, and I weigh 132 pounds. I am the mother of a 22 year-old daughter and a 15 year-old son. My husband and I have been married for 23 years. Most importantly, I'm now a healthy-looking vegan. I'm just finishing my book describing my experiences on losing weight healthfully. My desire is to help others...

USE FLAXSEED TO BOOST NUTRITION AND HEALTH

... consumption of flaxseed is believed to help prevent breast cancer, researchers from the University of Toronto found that it also may be useful in the treatment of the disease. For their study, the Canadian scientists asked postmenopausal women who had been recently diagnosed with breast cancer to eat either a plain muffin or a muffin containing 25 grams of flaxseed every day for four weeks.

Women who ate the flaxseed muffins showed a significant reduction in the rate of tumor growth, as well as an increase in the death of cancerous cells. Based on their findings, the researchers concluded that dietary flaxseed has the potential to reduce tumor growth in women with breast cancer...

... Peppermint is great brain booster. In fact, there are teachers that say that a quick peppermint will help kids in the classroom become more alert when they are feeling the midday slump. Burn a peppermint candle near you or use it in a diffuser when you need to feel more alive and awake. Peppermint is easy to find and can be mixed with other oils for a great smelling aromatherapy mix. How about using peppermint tea? Not only does it awaken your senses, but it can help fight off colds and infections, too. That is something caffeine and sugar cannot do!

BRAIN IMPAIRMENT FROM THE ATKINS DIET

Low-carbohydrate weight-loss diets. Effects on cognition and mood by Kristen D’Anci in the February 2009 issue of the journal Appetite concluded that, “The present data show memory impairments during low-carbohydrate diets at a point when available glycogen stores would be at their lowest.” Women followed a low-carbohydrate diet, similar to the Atkins diet, or a reduced-calorie balanced diet, similar to that recommended by the American Dietetic Association (ADA). “Results showed that during complete withdrawal of dietary carbohydrate, low-carbohydrate dieters performed worse on memory-based tasks than ADA dieters. These impairments were ameliorated after reintroduction of carbohydrates.”  After about one week of severe carbohydrate deprivation subjects demonstrated impairment of memory.

FEWER CALORIES, LONGER LIFE?

Previous research has shown that animals that eat 30 to 50 percent less food live significantly longer lives — sometimes up to 50 percent longer than animals fed regular diets — and have fewer age-related diseases compared to their peers. Those findings have led some people to adopt their own restricted-calorie diets in hopes of gleaning the same benefits. But there's been little evidence to date to show whether the approach works in humans the same way it does in animals...

In an article published in the journal Aging Cell, Fontana and colleagues measured CRONies' levels of a chemical called IGF-1 (insulin-like growth factor-1). In animals, levels of IGF-1 decline by about 40 percent when calories are restricted; this reduction is believed to play a role in protecting against cancer and slowing aging. The researchers found no differences in IGF-1 levels between people on calorie restrictions and those who were not. But when they asked some of the CRONies to cut their intake of protein—also known to influence IGF-1—for three weeks, their levels of the chemical declined dramatically. The same researchers found similarly low levels of IGF-1 in vegans, even those who were heavier and had more body fat than the CRONies.

While preliminary, the findings suggest that the level of protein in the diet, not just the number of calories, may influence longevity, and that a diet rich in low-calorie, nutrient-dense plant foods may be the real fountain of youth...

THE LOW-CARBON DIET

Full disclosure: I love to eat meat. I was born in Memphis, the barbecue capital of the Milky Way Galaxy. I worship slow-cooked, hickory-smoked pig meat served on a bun with extra sauce and coleslaw spooned on top.

My carnivore’s lust goes beyond the DNA level. It’s in my soul. Even the cruelty of factory farming doesn’t temper my desire, I’ll admit. Like most Americans, I can somehow keep at bay all thoughts of what happened to the meat prior to the plate.

So why in the world am I a dedicated vegetarian? Why is meat, including sumptuous pork, a complete stranger to my fork at home and away? The answer is simple: I have an 11-year-old son whose future—like yours and mine—is rapidly unraveling due to global warming. And what we put on our plates can directly accelerate or decelerate the heating trend...

ARE COWS WORSE THAN CARS?

Everyone knows driving an SUV or leaving the lights on is bad for the earth. But when it comes to your environmental impact, what's on your plate is just as important...

"I think it's amazing that even the greenest of green liberal environment activists, the vast majority of them tend to consume meat at the same rate as people who think global warming is a hoax," says Mike Tidwell, director of the Chesapeake Climate Action Network. "Meat consumption seems to be the last thing that progressive people address in their lifestyle. If I had a nickel for every global warming conference that had roast beef on the menu, I'd be rich."

AS MORE EAT MEAT, A BID TO CUT EMISSIONS

... Producing meat in this ever-more crowded world requires creating new pastures and planting more land for imported feeds, particularly soy, instead of relying on local grazing. That has contributed to the clearing of rain forests, particularly in South America, robbing the world of crucial “carbon sinks,” the vast tracts of trees and vegetation that absorb carbon dioxide.

“I’m not sure that the system we have for livestock can be sustainable,” said Dr. Pachauri of the United Nations. A sober scientist, he suggests that “the most attractive” near-term solution is for everyone simply to “reduce meat consumption,” a change he says would have more effect than switching to a hybrid car...

HOW MEAT CONTRIBUTES TO GLOBAL WARMING

*Pound for pound, beef production generates greenhouse gases that contribute more than 13 times as much to global warming as do the gases emitted from producing chicken. For potatoes, the multiplier is 57.

VEG 4 EARTH

Read through the petition and show your support by signing it. Your name will be used in petitioning policy makers on every level in governments around the world.

In light of the dangers facing humanity from climate change and environmental degradation - and to ensure a future of plenty and peace, I pledge my:

        * action in reducing or eliminating the animal elements of my diet - major greenhouse gas emitters;

        * support for all possible governmental policies that reduce or eliminate the inherently wasteful and cruel global livestock industry;

        * support for reforestation/afforestation programs and the release of previously grazed land to such protected rehabilitation;

        * and my support for the economic compensation of those whose livelihoods are adversely affected by these necessary changes.
